Vegetable Fermentation
Vegetable Fermentation Taught by Vitor Barão and Carolina Coronato
Participants will be invited to take an investigative look at plants from a workshop and create their own compositions of colors, aromas and flavors in lacto-fermentation processes. They will also learn about the control of unwanted microorganisms, methods and care. The students will take home a pickle, sauerkraut and a home fermenter.

Vitor Barão
Biologist, botanist, photographer and self-taught cook, he works as a multidisciplinary artist between the languages of art, science, cooking and technology. He creates strategies to support scientific and artistic investigations with nature through workshops, trainings, immersions and consultancies.

Carolina Coronato
A pedagogue and art educator, she has been working in education since 2008. Her work is guided by nature, the use of different languages and the aesthetic dimension.
An enthusiast of cooperative and sensitive education, where individual capacities are strengthened and enhanced in collective processes, she develops workshops for adults and children, always working at the intersection of art, education and nature. In 2022, she held the cycle of workshops "Lines in nature, play and the city" with the children of the 9 de Julho Occupation in São Paulo, the "Fermentation workshop" at Sesc Guarulhos and the "Grammars of Nature" immersion.
